Surabaya Layer Cake is one of Indonesia's signature cakes. This cake is slightly similar to sponge cake, but lighter and smoother because of the large number of egg yolks. Most birthday cakes usually use Surabaya Layer Cake, beside the tastes, it is also fine to be covered by fondant and butter cream.
Here is the recipe (I took from NCC):
15 egg yolk
150 gr caster sugar
190 gr butter (beat till smooth)
62,5 gr mocaf
12,5 gr milk powder
1. Pre heat oven to 180 C
2. Beat egg yolk and caster sugar untill stiff
3. Mix butter
4. Mix sifted flour and fold in thoroughly
5. Pur the mix into 3 tins (22 x 10 x 4 cm)
6. Add chocolate paste into 3rd mix
7. Bake 20 min with bottom + 2 min with top fire
