Mocaf Vanila Cupcake

This vanila cupcake recipe is taken from DapurSolia blogspot. I used this cupcake as based cupacke for may previous baby girl cupcake. The textured of this cupcake is soft, since using many eggs. Resep cupcake ini saya ambil dari DapurSolia blogspot. Saya menggunakan cupcake ini untuk based cake  pembuatan baby girl cupcake yang saya post sebelumya. Rasa cupcake ini cukup lembut karena menggunakan banyak telur.
Ingredients / Bahan:
300 gr butter atau margarin / butter atau mentega
150 gr sugar / gula
8 egg yolks / kuning telur
250 gr mocaf
25 gr cornstarch /maizena
1 tsp baking powder double acting / 1 sdt
50 ml milk / susu cair
6 egg white / putih telur
50 gr sugar / gula
1/2 tsp vanila / 1/2 sdt

Steps / Cara membuat:
1. Beat butter and 150 gr sugar till smooth. Kocok mentega dan 150 gr gula hingga lembut
2. Add egg yolk, add one by one, and beat it till well mixed. Tambahkan kuning telur satu persatu , kocok hingga rata
3. Add mocaf, cornstarch bpda, and mik alternately. Beat it till well mixed. Masukkan tepung terigu, maizena, bpda bergantian dengan susu, kocok hingga rata
4. On the other bowl, beat white eggs and 50 gr sugar. Di tempat terpisah, kocok putih telur dan 50 gr gula
5. Pour white eggs into dough. Masukkan putih telur ke adonan tepung
6. Add vanila Tambahkan vanila
7. Bake for 30 min, on 160 C and 2 min on 180 top fire only. Panggang pada suhu 160 C selama 30 menit lalu 2 menit dengan api atas pada 180 C. Jika menggunakan loyang, menggunakan yang 20 x 20 x 7 cm.

Mocaf Lapis Legit - Mocaf Layer Cake

To make this cake is not difficult, but it is tough since each layered need 7- 10 mins and this cake have more than 15 layered. Baking this cake should be very patience.

Lapis Legit is Dutch - Indonesian layered cake. It is acculturation between Dutch recipe and local ingredients.
This cake contain cinnamon.
Lapis is derived form its layered structure.
Legit means very rich layer cake since for 20cm x 20 cm needs 30 egg yolks.


Ingredient (I take from NCC recipe but using Mrs Liem technique)
- 650 gr egg yolk
- 250 gr sugar
- 3 sp milk
- 500 gr butter
- 1tsp salt
- 1tsp vanila
- 50 gram mocaf
- 20 gr milk powder
- 1 sdm cinnamon
Step
- mixed butter and milk untill fluffy and pale
- mixer egg yolk , sugar and vanila till thick
- heat oven 200 C top heat only
- pouring 100 gr of the batter. Baked one layer after another in the oven untill golden with heat from the top. 7 - 10 minutes

Painting - Mocaf Mini Cake

Inspired by one of tshirt design - especially from Yogyakarta where my husband came from, I am curious whether I can move it to cake.

1st I buy the smallest brush I could find.
Then covered cake using fondant.

Initially I mix one drop of food coloring and one drop of water, but it is to light, so I used food coloring directly.

Really enjoy to finish this decoration.
Theme of this cake is Javanese boy wearing traditional Javanese costume. And I put "becak" and "sepeda" since its many in Yogya.

And I used Javanese font "Hanacaraka" to write Hepi Bede Dito ^_^ .

Anyway, we always miss go back to Yogyakarta, miss the traditional food,  wayang, gamelan, the farmers, everything. Its truly Indonesia.

Flower Cup Cake (3)

I tried to make many different flowers using various spuits and technique.s
Here is the result. Far from perfect but the process was fun.

This is the second cup cake bouquet that I made today.
I used a shoe-shaped christmas decoration as the pot.
I tried to use color gradation between yellow and orange to make the rose.

Today, I spent my spare time to make a cupcake bouquet dummy.
I used Wilton's buttercream recipe. This recipe is used for icing cakes, borders, flowers and more.



Ingredients:
1/2 cup solid vegetable shortening
1/2 cup butter / margarine softened
1 tsp vanile
4 cups confection sugar
2 tablespoop milk

Instructions:
1. Cream shortening & butter with electric mixer
2. Gradually add sugar and beating well on medium speed
3. Add milk and beat at medium speed untill light and fluffy

For thin consistency icing, add 2 tablespoon light corn syrup, water or milk.

Mocaf Rainbow Cake (2nd) - Tata Birthday

Different from the previous rainbow cake that only uses white egg, this rainbow cake also uses egg yolk. I made this cake for my daughter's birthday. After covering it with cheese frosting, I put some figurines made of fondant, which is a girl with a notebook and a bag. I used Besta Arlita recipe.
 
Ingredient:
1. 7 egg yolks
2. 7 eggs
3. 210 gr castor sugar
4. 210 gr mocaf flour
5. 15 gr milk powder
6. 1 spoon emulsifier
7. 210 gr margarine
8. food coloring - 4 - 8 drops per layer

Steps:
1. Beat sugar, emulsifier and eggs till stiff
2. Mix flour and fold d in thoroughly
3. Mix margarine (that already boiled first and wait till cold)
4. Divide into 6 tins - 190 - 200 gr per each
5. Tins = 22 x 22 x 4 cm
6. Bake using temperature 160 C for 15 minutes

Mocaf Surabaya Layer Cake (Lapis Surabaya)



Surabaya Layer Cake is one of Indonesia's signature cakes.  This cake is slightly similar to sponge cake, but lighter and smoother because of the large number of egg yolks. Most birthday cakes usually use Surabaya Layer Cake, beside the tastes, it is also fine to be covered by fondant and butter cream.

Here is the recipe (I took from NCC):
15 egg yolk
150 gr caster sugar
190 gr butter (beat till smooth)
62,5 gr mocaf
12,5 gr milk powder


1. Pre heat oven to 180 C
2. Beat egg yolk and caster sugar untill stiff
3. Mix butter
4. Mix sifted flour and fold in thoroughly
5. Pur the mix into 3 tins (22 x 10 x 4 cm)
6. Add chocolate paste into 3rd mix
7. Bake 20 min with bottom + 2 min with top fire
